I am not expert and it may take some more effort and time than I can affort to take right now. I have a brand new project that I thought would take 5 months to do. I have been given 2.5 months.
I will try not to forget to get a receipe for boudin (I have seen it light and dark, mostly light). It is spicey and I think I would love it if I could eat it and not feel guilty. Maybe one day I could send you a 'care package' of cajun spices.
As for the Hungarian sausage, I vaguely remember a name that sounds like Horka or Hoerka.
